Gianni Oikonomou is the oenologist and the soul of this estate. His extensive winemaking experience includes an oenology degree from Alba, cellar work in Germany and Bordeaux (Château Margaux) as well as Piedmont, under the guidance of nebbiolo maestros such as Ceretto and Scavino. Upon his return to Crete in 1994, he resurrected the family vineyards.
The estate covers 120 hectares, although vines only account for 7 with a further 12.5 hectares dedicated to olives. He focuses on the indigenous grapes of Crete, using vilana and thrapsathiri for the white Sitia and liatiko for the red. Farming is natural and the total annual production of all the wines is roughly 20,000 bottles. Having rejected the tenets of technological winemaking, he has used his considerable understanding of chemistry to make enduring wines far from the mainstream, but which are admired internationally.
