This bottling from Chapel Gate whisky bonders is exemplary, based on 60% malt and 40% grain, with that delightful combination of grass, apple and lemon typical of Irish pot still whisky counterpointed by more viscous, oily notes and spice from ageing in both bourbon and sherry casks. Totally unpeated and addictively smooth, this is a great example of this resurgent style.
