The Old Tom from Jensen doesn't rely on sugar or any other form of sweetener, unlike a lot of its competitors, because Christian Jensen believes that the original 19th century Old Tom style would have been dry, but with earthy liquorice and botanical roots rather than juniper as the dominant base note. As a result, this has a different botanical profile from their Bermondsey Dry, but the extra base notes of liquorice alongside the classic gin botanicals make this a superb gin for cocktailing.
