From the man who helped establish the reputation of Nyetimber before they were bought out, The Trouble With Dreams is a chardonnay-dominant cuvee, deliberately created to be a linear, focussed, precise style of English sparkling wine, and built with ageability in mind. The base wines ferment in stainless steel and large 500l casks. With a lowish doage of 6g, the flavour is intense with rhubarb, citrus, crabapple and rich toastiness, wrapped around a core of soaring acicity. With only 3,000 bottles made this represents one of the pinnacles of English sparkling wine to date and is a brilliant candidate for cellaring for decades, if you can resist drinking it.
