Olivers Yarlington Mill Batonnage Cider 2021 6.7% 750ml Herefordshire

Tom Olivers favourite bittersweet cider apple, Yarlington Mill, blended 95% with a 5% dash of the bright and high-acid Foxwhelp, to help point the cider up. Batonnage is the French term for stirring up the lees in the vessel where the wine or cider has been maturing. The process of mixing them back into the cider, can extract more flavour, aroma & texture, here a notable creaminess on the palate. This opaque cider has a citrus marmalade aroma & an intense floral Yarlington Mill character, with a soft apple compote flavour. A full and creamy texture, makes this a great introductory bottle of fine cider. All Herefordshire Yarlington Mill apples, which are probably the best in the country.
