Boatyard Old Tom Gin 41% Ireland

A superb gin from this Fermanagh-based distillery in Northern Ireland, this is an interpretation of the original style of gin before the era of the ubiquitous London Dry. Made with a triad of juniper, which is over 80% of the botanical charge, with coriander in a supporting role, this is then finished in Pedro Ximinez casks taking on some of the exotic flavour of these intense wines. The rich, orange and fig-spiked flavour profile makes a stunning Martinez cocktail, but is also brilliantly rich in the classic Negroni.
