Hine use only cognacs from the Petite and Grande Champagne regions which, as their names implies, are the creme de la creme of cognac vineyards. The XO is exclusively from fruit grown within Grande Champagne, and is blended as a homage to the founder, Thomas Hine. All the cognacs here are over 10 years old, with some vintages back to 1983, including some stocks matured in the UK through a peculiar loophole of the cognac appellation regulations, giving a distinct personality from entirely French-matured cognacs. Expect some ripe orchard fruit and notes of peach alongside vanilla, butterscotch, dried fruit and a touch of nuttiness.
