Cantina della Volta Rosato Brut 2017 Emilia Romagna

The extraordinary wines of Cantina della Volta defy the stereotypes of Lambrusco. Made using the traditional method from local varieties, this is an ambitious and complex wine aged for 41 months in bottle following the second fermentation. This is deeply savoury with custard cream and strawberry cheesecake notes alongside delicate and perfumed floral elements - rose petals, perhaps - that lead onto a bone dry finish. Stunningly good.
