Jean Bourdy Chateau Chalon 2015 Jura

Aged for six years before release, according to the stipulations of Chateau Chalon AOC, this is everything you could wish for from a classic vin jaune of the Jura. Made entirely from savagnin and aged under voile, this is deeply, profoundly savoury, with notes of amontillado, curry powder,walnut and roasted pineapple. Ideal with long-aged cheeses, especially but not exclusively comte, and worth a decant for a few hours before drinking. The bottle size is the unique clavelin, 62cl, said to be the amount of wine that would be left after ageing a full litre of vin jaune for the requisite six years.
