Cincinatto, Lazio

Founded as a cooperative in 1947 by a small group of farmers in Cori, Cincinatto now counts 130 members farming some 550ha of vines.  Over the last 20 years the cooperative has pushed for increasing levels of quality.  Meticulous rules govern the management of the vineyards and harvest times, with no irrigation allowed and a drive towards organic viticulture with 100ha now certified and the introduction of solar power for the winery and vehicles running on natural gas.  They have also undertaken the revival of the area's local grape varieties, nero buono, bellone, cesanese and greco, no longer cultivating international varieties.
