Joao Pato Duckman Branco 2021 Bairrada

Maria-Joao Pato is Luis PatoÕs middle daughter. No surprise then that Maria-Joao would also have something to add to this nest of innovation and experimentation, drawing on her legendary father's experience to push the boundaries of what is possible from Bairrada's terroir and grape varieties. Made mainly from the local bical variety with a touch of maria gomes and planted in 2.8 hectares of sustainably-farmed land, the grapes are harvested early and spend a short time on skins before wild yeast fermentation. With aromas of lemon curd, apricot, white mushroom and a herbal note like nettle there is lots going on here. Unfiltered, with an oily texture, this has such bright acidity that makes it a great complement to savoury soups and earthy spices.
