He has turned the venerable cellars of Fernando de Castilla into one of the leaders of Sherry's revival, and his Classic Oloroso is a benchmark wine. Nut brown, with the oiliness and body typical of Oloroso's oxidative ageing, there is plenty of umami richness and mouth-coating glycerol but not a hint of sweetness, meaning that it works equally well as an aperitif or a digestif and is an obligatory companion to mince pies.
