Vallarom Cabernet Sauvignon 2021 Trento ORG

The Vallarom winery is a jewel of the alpine foothills, just up the valley from Lake Garda and knocking on the door of Alto Adige in Northern Italy. Since taking over in 1998, scientist Filippo Scienza and his wife Barbara have endeavoured to return to viticulture methods of times past, informed by a scientific understanding of the seemingly alchemical process of turning grapes into wine. Believing chemical use on the land could only obscure the terroir of this unique site, they have been certified organic since 2011 and the duo craft soulful wines that highlight the distinctiveness of the weather each year. The winemaking is minimalist with precious little added sulfur, trusting in the health of his vines and grapes, aiming to transmit as transparently as possible where they are grown to you, the drinker. The special micro-climate and clay soil give ripe cabernet without high alcohol, a dream combination. This has lovely proportion and balance, a fluid ripe and sensual texture without heaviness. A conservative expression of cab without austerity.
