After a brief dalliance with more glamorous international white grape Chardonnay in recent years, Vermentino has once again emerged as the star variety for Tuscan white wines. Late-ripening and a sun-worshipper, Vermentino's rich citrus fruit, bitter herbal twist of bay leaves and slight oiliness all add up to a fantastic wine for the dinner table, especially where fresh fish is involved.
